Introduction

I kind of made this up one night when I wanted something different using what I had in the cabinet and it's become a family favorite. It's good with either rice of pasta. Ingredients

    1 lb. boneless, skinless chicken breast
    1/4 cup apple juice
    1/4 cup water
    1 TBSP Extra Virgin Olive Oil
    1 TBSP butter, salted
    2 TBSP minced garlic

Directions

Cut chicken into cubes, about 1-2 inches. Heat oil and butter in a large saute pan and add chicken and garlic. Cook chicken until brown on all sides.. Once chicken is brown, add apple juice, cover and simmer, stirring occasionally until cooked thru. If it needs more liquid to prevent burning the chicken (or you need to keep it warm awhile), add water a tablespoon or so at a time.
