Ingredients

    6 eggs
    1/2 red onion
    2tsp olive oil
    couple dashes wortechire
    1tbs ketchup
    1 tsp soy or braggs
    1 lg potato cooked and sliced
    4 oz light feta cheese
    4 yves veggie sausages chopped

Directions

fry onions in olive oil, add a bit of water if they start to stick, keeping the pan on medium heat ad sausages, add whisked eggs, layer half the feta and the potato slices, ad remaining feta and bake in 375 degree oven till firm.
