Ingredients

    6 medium red potatoes, scrubbed and quartered
    1 C baby carrots
    2.25 lb. boneless pork loin
    4t McCormick French Herb roasting rub, divided
    2 medium onions, cut into wedges

Directions

Preheat oven to 350.
Place potatoes and carrots in large pot of water. bring to boil, and cook 5 minutes.
Meanwhile, place pork loin in center of large roasting pan and rub with 2t of the seasoning blend.
Drain potatoes and carrots and return to pot. Add onion and remaining seasoning and mix gently. Arrange veggie mixture around pork.
Roast 50 minutes.
Turn heat to 400, and continue roasting another 10 minutes, or until cooked through.
Let rest 10 minutes before slicing.
