Number of Servings: 6

Ingredients

    1/2 Cup Chopped Onion
    3/4 Cup Chopped Celery
    1/2 Cup Chopped Red Pepper
    1/2 Tbsp Olive Oil
    1/2 Cup Chopped Carrots
    2 Cups Prepared Chicken Stock
    2 16oz Bags Frozen Broccoli
    8 oz Diced Cheddar Cheese
    8 oz Velveeta 2 % Cheese
    1 tsp Garlic Powder
    1/2 tsp Pepper
    1 Tbsp Dry Parsley
    1 Whole Chicken breast (About 2 cups diced)
    1 1/2 Cups Skim Milk

Directions

~Boil chicken in large pot of water. Reserve 2 cups of stock.
~Dice chicken and set aside.
~In large saucepan, saute celery, onion, garlic powder,pepper, parsley and red pepper in the olive oil for about 5 minutes.
~Add broth, 3/4 of the broccoli and the carrots.
~Cover and simmer for about 5 minutes or until tender.
~Puree in blender or food processor.
~In same sauce pan melt cheeses with milk.
~Add puree, remaining broccoli and chicken to cheese and heat through.
*Makes about 6 one and a half cup servings.
