Ingredients

    1 lb. box Fettucini
    1 bag Baby Spinach
    2 cloves Garlic
    4 oz. Low Fat Cream Cheese
    1/4 cup Grated (bag) Parmasen Cheese
    salt
    pepper
    red pepper flakes (optional)

Directions

Put 2 cloves of garlic in food processor and chop, add 1/2 cup of Low Fat Cream Cheese and process by pulsing add 3/4 of a package of Baby Spinach a hand full @ a time and process until fairly smooth, add 1/4 tsp. of salt, 1/2 tsp. of pepper and a pinch of cayenne papper and process. (I also add a big pinch of red pepper flakes, I like spicy food)
Chop remaining 1/4 bag of Baby Spinach into medium size chop and put in bottom of large pasta bowl.
Cook fettucini according to package. Spoon fettucini directly from pot (just draining water somewhat) onto chopped spinach in bowl Add Cream Cheese/Spinach mixture onto pasta, add a couple of spoons of pasta water (if needed to thin sauce) and mix.
