Ingredients

8oz fat free cream cheese
4.5 oz can of diced green chilis
2x 8oz cans of green chili sauce
1 lb of boneless, skinless chicken breast
1 package of Carb Balance flour tortillas (10)
1 package of 2% Mexican Blend Kraft Cheese
Directions
Preheat oven to 350 degrees
cube chicken and cook in skillet until cooked through. remove from skillet and set aside.
Combine cream cheese and diced green chilis in skillet and mix until smooth. Add chicken to sauce and stir until chicken is evenly coated. Fill 8 to 10 tortillas with chicken filling and roll up. Place in 13 x 9 inch pan side by side. Once all enchiladas are in pan, pour green chili sauce over the top. You should need between 1 and 2 cans depending on your preference. Sprinkle 4 cheese blend over the top and bake between 25-30 minutes or until cheese is bubbly.
Makes 8-10 enchiladas depending on how much filling is put in each one.
Two enchiladas and some black beans on the side is a great dinner! and so easy!
