Number of Servings: 8

Ingredients

    2 cups sweet potatoes, cooked and drained
    1/2 stick margarine, melted
    3 eggs
    1 cup sugar
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    3/4 cup nonfat milk
    1 teaspoon vanilla
    1 9" pie shell, baked (I use my recipe)
    1/4 cup chopped pecans (optional, not calculated)
    whipped cream (optional, not calculated)

Directions

Mash together your cooked sweet potatoes with melted margarine. Whip in eggs, sugar, cinnamon and nutmeg. When well mixed add in the milk and vanilla. Pour it all into your baked pie shell and heat in the oven for about 40 minutes at 350 degrees F. It's done when the center is somewhat firmed up. Scatter chopped pecans over the pie before serving and top with whipped cream (optional).

    I added 1/4 tsp almond extract, 1/2 tsp ginger and 1/8 tsp cloves. My family was really impressed. I was looking for something close to what my Grandmother Clara served and I think I found it! - 11/20/09

    I also like to add a teaspoon of rum flavoring to my sweet potato pies. - 1/9/12
