Introduction
Since traditional orange chicken is breaded and deep fried, I just use the sauce as a stir fry sauce and add a bunch of our favorite vegetables.If you want to add more than 1 lb. of vegetables, I would double the sauce recipe. Ingredients

1 lb. boneless, skinless chicken breast, cut into 2" pieces
1 lb. vegetables of your choice
Sauce:
2 t orange zest
1/4 cup fresh squeezed orange juice (about what you would get from 1 large orange)
1/2 t sugar
2 T chicken stock
1 T soy sauce
1 T minced ginger root
1 t minced garlic
1 tbs. rice wine
1/4 cup water
Directions
You can cook this a couple of different ways.
1) Stir fry the chicken and remove from wok. Stir fry the vegetables until crisp tender. Add chicken back to wok, reduce heat to medium-low, add sauce and cook until slightly thickened.
2) Grill or broil chicken. Steam or microwave vegetables until crisp tender. Add sauce ingredients to a sauce pan and cook over medium low heat until slightly thickened. Mix chicken, vegetables and sauce.
Serve with rice.

I had a go at this recipe today- I added courgettes, bell peppers and mushrooms to the mix.
Whilst I did enjoy it, it was slightly bland for my taste.
I would make it again but next time I will add more veggies as I love my vegetables and double the sauce amount but with less water (1 measure). - 6/4/09
