Ingredients

1 cup Carrots-grated with a small grate
1 cup Flour
1 Tbsp Sour Milk or Buttermilk
1 tsp Cinnamon
1 Egg
1 cup Pecans Chopped
1 cup Sugar
1 cup Raisins (ground in food processor)
1 Tbsp Shortening
1 tsp Soda
1/4 tsp Salt
Directions
Dissolve soda in milk, then mix with rest of ingredients. Steam in a well greased mold for 1 to 1 1/2 hours or until toothpick in center comes out clean. Be sure to check while steaming because it can burn quickly. Serve warm with milk or GG's Vanilla Sauce (see recipe)
