Ingredients

    1 T light margarine
    2 c. chopped potato with skin
    2 T chopped jalapeno
    1/2 c. chopped onion
    4 large eggs
    4 egg whites
    2 T skim milk
    1 t chili powder
    1/2 t cumin
    1/4 cup salsa
    6 precooked turkey sausage links
    1 c. fat free shredded cheddar


Directions

Preheat a large skillet on medium-high heat. While you have the margarine melting in the warming skillet, chop the potatoes, leaving the skins on. Put the potatoes in the skillet and cover.

Chop the onions and jalapenos and add to the frying potatoes, stirring occasionally. Add or subtract jalapenos depending how spicy you like things. Jarred jalapeno slices are good to use because the juices flavor the potatoes well. Cook until potatoes are tender, approximately 15 min.

In another skillet scramble the eggs, egg whites, skim milk , cumin, and chili powder.

Chop the precooked turkey sausage links to bite size pieces, and add along with salsa to potatoes approximately five minutes before done cooking to heat up.

Add the egg mixture and cheese to the potatoes when everything is cooked, and mix together. Leave on heat just long enough to melt the cheese.

Makes 4 bowl-sized servings.
