Ingredients

Olive Oil, 2.00 tbsp
Onions, raw, 1.00 cup, chopped
Beans, black, 1.75 cup
Tofu, extra firm, 1.00 block
Beans, pinto, 1.75 cup
Brown Rice, long grain, 2.00 cup
Del Monte Petite Cut Diced Tomatoes, 1.75 cup
Del Monte Diced Tomatoes, No Salt Added, 1.75 cup
Directions
I start the rice cooker with 2 cups of rice. While it's cooking:
Saute chopped onion in olive oil. Added cubed tofu, tomatos (I like to use one can of diced tomatoes with green chilis), and beans. Bring to low simmer.
Usually by the time I've done all the above, the rice cooker is done and so I add the fresh steamed rice. Stir it in well and cover the pan with the lid. I turn off the heat and let it sit for about 25 minutes.
