Ingredients

    6 boneless chicken breasts
    2 tbsp olive oil
    1 head cabbage, but into 6 wedges
    1 14 oz can diced tomatoes
    1 green pepper, chopped
    1 small onion, chopped
    1 tsp minced garlic
    1 cup mozarella cheese

Directions

In a 12 inch skillet, brown chicken in heated oil over medium heat about 15 minutes, turning as necessary to brown. Drain off fat.

Place cabbage wedges around chicken. Combine undrained tomatoes, green pepper, onion and seasonings and add to skillet.

Bring to a boil, reduce heat. Cover and simmer 35 to 40 minutes or until chicken is tender. Sprinkle cheesse over all. Cover and cook about 2 minutes or until cheese is melted.

Makes 6 servings, approx 461 calories per serving (5 grams fat, 21 grams carbohydrate, 10 grams fiber)

    Kind of bland, but surprisingly, my husband said he liked it (and he HATES cabbage)! Some sasonings would spruce this dish up considerably, but it wasn't too bad. - 1/26/09

    Oh my, This was so easy and ever so delicious. I used it to entertain a party of 4. We did the whole Italian theme. Thank you for a great idea. I just wished I was this creative. - 1/23/09
