Introduction

Ingredients

    4 whole-wheat pita loaves
    1/8 cup pesto sauce
    shredded mozzarella cheese
    1 18 oz jar sweet red peppers

Directions

Separate the pita halves by inserting a sharp knife into the edge of the pita bread and slicing around the edge, making two circles of bread. Spread half of the circles with pesto sauce - sparingly. Drain red pepper pieces on paper towels and pat dry. Place pepper pieces on top of the pitas with pesto and then top with mozzarella cheese. Put the remaining pita circles on top of the sandwiches. Using a grill pan sprayed with non-stick cooking spray, cook over medium heat, grilling the sandwich on both sides until cheese is melted and sandwich is heated through - about 5 minutes total.

If you don't have a grill pan, you can use a plain frying pan sprayed with non-stick cooking spray or just place on a foil-lined cookie sheet and bake for about 10 minutes at 350.
