Introduction
My husband's mom made this faithfully each year for his birthday from the time he was old enough to remember. I continue the tradition for her and the entire family looks forward to January 12th each year!This is a light and fluffy dessert. This is a light and fluffy dessert.

Ingredients

1 9oz package chocolate wafers
6 egg whites
1/4 tsp salt
1 tsp vanilla extract
1 cup powdered sugar
1 pint heavy whipping cream
1/2 cup boiling water
2 TBS (packets) unflavored gelatine powder
1/3 cup cold water
Directions
Line a 10" spring form pan with a layer of chocolate wafers on bottom and a row around the sides. It's ok for there to be some space between the wafers. Carefully set aside.
Put remaining wafers into baggie and crush to chunky crumble. Set aside to use for topping.
Beat egg whites until fairly stiff.
Beat in salt, vanilla and gradually add powdered sugar until all is combined.
Beat whipping cream to stiff peaks.
Gently fold in egg white mixture.
Dissolve gelatine powder in boiling water; once entirely dissolved, stir in cold water.
Add gelatine liquid in slow stream to whipped mixture with a constant and gentle folding action until combined.
Pour whipped filling into wafer lined pan and spread evenly.
Top with reserved crumbled wafers.
Refrigerate until set. at least 4 hours.. overnight is best.
To serve: carefully remove sides of pan, slice with a very sharp knife (wipe knife clean after each cut).
