Introduction
My Puerto Rican Favorite tweaked a bit.I don't agree with the nutritional analysis since I always rinse and drain all cans and the sodium cannot possibly be that high!! My Puerto Rican Favorite tweaked a bit.

Ingredients

2 cups Brown rice
1 can tomato paste
2 cans Red Kidney beans
1 can corn
1 small can mushroom pieces
2 lbs chicken (I used chicken wings)
1 tsp pepper
1 tsp cumin
2 packets Goya Sazon (makes the rice yellow)
4 cups water
oil spray
Directions
1. Cube chicken breast. Brown chicken in large skillet using oil spray on all sides.
2. add rinsed and drained kidney beans, corn, rice, rinsed and drained mushrooms, and spices. Slowly add water and stir. mix tomato sauce and a little of the water to make it pourable. add tomato to pan.
3. Bring to a boil over medium heat. Lower to simmer, cover and let cook for 30 minutes.
