Ingredients

    Golden Wax Beans, canned, 14.5 oz or 3.5 cups
    Green Beans, canned, 14.5 oz or 3.5 cups
    Dark Red Kidney Beans, 14.5 oz or 3.5 cups
    Chick Peas, 14.5 oz or 3.5 cups
    Onions, raw, .5 cup, chopped
    Green Peppers (or mixed bell peppers), 0.5 cup, chopped
    Vinegar, .5 cup
    Canola Oil, .25 cup
    Garlic, 1 clove
    Oregano, ground, 1 tsp
    Pepper, black, .5 tsp

Directions

Drain and rinse canned beans.
Chop garlic, onion, and peppers.
Mix oil and vinegar and then stir all ingredients together. Cover and chill for a few hours before serving.

Hint, I use frozen mixed pepper strips and then chop all ingredients in a mini chopper. The cold peppers help to chill the bean salad.

    Good Recipe, but I did make a few changes - added fresh diced cilantro, fresh tomatoes in place of the wax beans, and substituted white wine balsamic vinegar in place of the regular vinegar. Overall, this is an excellent source of fiber, great tasting and very filling. Two thumbs up! - 5/13/10
