This soup is sure to fill any person's appetite. This is a personal favorite of mine since this is my mom's recipe. Ingredients

    1 lb of Beef Cubed - may also purchase Beef for beef stew
    4 14.5 ounce Cans of Beef Broth
    2 Carrots Chopped
    2 Celery Stalks Chopped
    1/2 Peeled Potato Cubed
    1 14.5 Ounce can of Whole Tomatoes
    2 Cups of Water
    1 Cup of Medium Barley


Directions

Start by chopping all vegetables and setting them aside. Brown beef in a medium size pot on medium heat. Once been is browned, crush tomatoes over pot and add tomatoes to pot. Be sure to add all juice to the pot as well. Add in all vegetables and add in beef broth and water. Bring to a boil and add barley. Cook until barley is fully cooked stirring often. May add mozzarella cheese to your bowl of soup for extra flavor.

Makes 6 servings.
