Ingredients

    2 cups (uncooked) brown rice
    2.5 cups chicken broth
    6 chicken breasts
    2 cups fresh or canned asparagus
    3 ounces swiss cheese
    1 clove garlic
    1 tbsp black pepper
    1 tbsp poultry seasoning
    2 tbsp minced onion

Directions

Spread 2 cups of uncooked brown rice across the bottom of a glass baking pan. Pour 1.5 cups of chicken broth over the top of the rice. Place chicken breasts on top of rice. Spread asparagus between chicken breasts. Add garlic evenly over chicken and asparagus. Sprinkle black pepper, poultry seasoning, and minced onion evenly over dish. Top with sliced or grated swiss cheese, mainly on the chicken. Cover baking dish with aluminum foil. Bake at 350 degrees for 45 minutes. Remove foil. Bake an additional 15 minutes. Makes 12 servings.
