I like things spicy - if you don't like as much heat in your beans, reduce the amount of chili powder you put in.

Ingredients

    1 small onion, diced finely
    2 cloves garlic, diced finely
    1 Tbl Olive Oil
    1 15 oz can of Black Beans, not drained
    1 15 oz can of corn, drained
    6 Tbls El Pato Jalepeno Salsa, or other picante sauce
    2 tsp cumin
    1 tsp chili powder
    1/2 tsp sage
    1/2 tsp oregano
    salt and pepper to taste

Directions

In a large frying pan, saute onion and garlic in olive oil until onions become translucent.

Add black beans, picante sauce, and spices. Cook uncovered at medium heat for 15 minutes, stirring occasionally.
Stir in corn and cooked covered at medium heat for an additional 5 minutes.

Makes 4 1/2-cup servings
