Introduction

A light and healthy salad served wth crackers for an appetizer, or served as a salad on greens. A light and healthy salad served wth crackers for an appetizer, or served as a salad on greens.

Ingredients

    1 8oz pkg imitation crab
    1 8oz can water chestnuts
    1/3 c light mayonnaise
    2 green onions sliced thinly
    1/4 c grated carrots
    1 T lemon juice
    1 T lemon zest
    2 tsp lemon pepper

Directions

Chop crab, water chestnuts. Slice onlons thinly, add to crab mix. Grate carrots, add to crab mix. Add lmayonnaise, emon juice, lemon zest, and lemon pepper. Stir to combine. Serve with whole grain crackers.

Can be served on greens as a light salad
