Introduction
I had a friend who I used to cycle train with who gave me this recipe.Everyone always raved about these cookies at our 24 hour race events or when she'd bring them to share on our epic mountain bike rides! I had a friend who I used to cycle train with who gave me this recipe.

Ingredients

1C. uncooked Quaker oats
1C. dried cranberries
1 scoop protein powder (isolate)
0.5 C slivered almonds
0.25 C egg whites
1 tsp. vanilla extract
1 ripe banana
1 Tbsp. honey
optional: 0.5 C shredded coconut
Directions
Mix all ingredients together. Scoop into little balls and drop onto a lightly Pam sprayed cookie sheet. Cook for 20 minutes.
Makes ~20 cookies.

Quite tasty! I'll surely be making these again. Because I didn't have honey (used agave nectar instead), they didn't stick together very well so I added a few things. I added probably about half a cup of dark chocolate chips, used two scoops of protein powder, and added 2 tbsp of almond butter. - 4/20/11
