I love jambalaya. There is not getting around that fact. This is a recipe I use to prepare jambalaya in a manner consistent with my health goals. I love jambalaya. Ingredients

1/3 cup each onion and bell pepper
1 can diced tomatoes (add 2 servings worth)
1 cup brown rice
1 serving low fat turkey smoked sausage, coined
1 grilled chicken breast; shredded
Directions
*Makes 2 servings*
1. Spray a frying pan with olive oil, and saute onions and peppers.
2. In a medium sauce pan, boil 2 cups water. Add rice, sauteed veggies, sausage, and shredded grilled chicken breast. Stir, cover, and cook until the rice is done.
3. If you like heat, add your favorite cajun blend to the cooking pot. After, do not forget your Tobasco!
