Number of Servings: 8

Ingredients

    1 1/4 cup chicken broth
    1 cup plain uncooked whole wheat couscous
    2 TBS olive oil
    2 TBS lime juice
    1/2 tsp. ground cumin
    1 tsp. red wine vinegar
    2 cans black beans, drained and rinsed
    1 can Mexicorn, drained
    1 can petite diced tomatoes, drained
    salt and pepper to taste

Directions

In a sauce pan, bring chicken stock to a boil. Remove from heat, stir in couscous, cover and set aside for 10 minutes. In a small bowl, wisk together the olive il, red wine vinegar, cumin and lime juice. In a large bowl, combine beans, corn, onion, tomatoes. Mix well. When couscous is done, fluff with a fork, then add to the bean mixture. Add the oil mixture and toss well to coat. Serve room temperature or chilled. Serves 8 208 calories per serving

    Yum! I didn't have couscous, so used quinoa instead. Rice could probably be used, too. I also added cilantro and used corn from my parents' garden instead of mexi-corn. Very good flavor... - 5/17/10

    This recipe is pretty good. I added 3 things to it, and it just made it my kind of salad. 1/2 a cucumber peeled and quartered, thinly sliced, 1 large garlic clove, finely minced, and 1 green onion, thinly sliced. - 8/8/09
