8 eggs, 2 cups skim milk, 6 smokey links, 1/4 c onion, 1 small can mushrooms stems and pieces, 1/4 c red bell pepper, 1.3/4 c shredded low fat cheddar cheese, 3 slices bread, dash of salt, 1/4 tsp yellow mustard or dry mustard
Directions
Cube 3 slices of bread and let set out while preparing remaining ingredients. Combine 8 eggs in bowl with 2 cups milk and whisk together. chop smokey links, onion, mushrooms, bell peper and add to egg mixture. add cheese, mustard, and salt to mixture. Add bread crumbs and mix all ingredients well. In a 13X9 pan, sprayed with cooking spray, pour mixture into pan and let set in fridge overnight or for 4 hours minimumin fridge. Bake uncovered at 350 degrees for 45-60 minutes or until casserole is springy to touch. Cut into 12 even squares for 12 servings.
