Ingredients

    Peppers, sweet, red, fresh, 4.5 medium (approx 2-3/4" long, 2-1/2" (remove)
    Onions, raw, 1 large (remove)
    Cider Vinegar, 2 cup (remove)
    Maple Syrup, 1 cup (remove)
    *Grey Poupon Dijon Mustard, 3 tsp (remove)
    Garlic, 8 cloves (remove)
    Coriander seed, 4 tbsp (remove)

Directions

Finely chop peppers and onion in food processor. Combine all ingredients in 2 1/2 quart casserole.
Cover tightly with microwave plastic wrap and cook 4 minutes. Prick plastic to let heat out. Uncover and stir.
Cook uncovered 2 minutes or longer until of relish consistency.

    I cannot rate this but would love to try it. The serving size is a little daunting. How many pints does this make?? Maybe we can back into the number calories once we know that. Probably the serving size is about 1 T right?? - 7/2/10
