Ingredients

    1 egg
    2 egg whites
    2 pieces of bacon
    5 Leaves of spinach, chopped
    1 large mushroom, sliced
1/4" slice of onion, chopped (A slice, not a ring)
    1 clove of garlic, minced

Directions

In a medium sized pan, saute the bacon until it's golden brown and the fat has rendered.
Remove the bacon from the pan and most, but not all of the fat.
Into the still hot pan, add all everything except the eggs and saute for about 5 minutes, or until the onions are translucent and the mushrooms are cooked. While the veggies are cooking, scramble the egg and egg whites in a small bowl.
Add the egg mixture to the pan, and crumble in the bacon. Stir frequently until the eggs are cooked through.
