    1 cup black beans
    1/4 tsp cumin
    dash of salt (to taste)
    1/4 cup salsa (to taste)
    1 Tbsp. light sour cream


Drain and rinse canned beans. Mash in a bowl with cumin and salt. Mix in salsa and sour cream. Serve with tortilla chips or crackers. Makes 4 servings, about 1/4 cup each.

    Quick and delicious! I just made some now and had with some cut up veggies. I didn't have any sour cream on hand, so I used some lowfat yogurt instead. I also added some red bell pepper and pickled jalapeno slices for some kick. Thanks for posting! - 10/11/11
