Introduction

Gluten free pancakes that are easy and fast to make and a great addition to weekend breakfasts.
They also freeze very well (cooked) for a fast weekday breakfast.

Ingredients

    1 cup rolled oats
    1/2 cup applesauce, plain*
    1 egg
    2 tablespoons maple or agave syrup
    1/2 cup yogurt - plain, low fat
    1/4 cup oat bran
    1/4 tsp baking powder, rounded
    1 tablespoon fiber - I use acacia fiber

    butter or oil for pan

Directions

Combine all but the baking soda in a blender and puree into a smooth batter. Add baking powder and run slowly to combine.

Heat skillet over medium heat and add batter, about 2 tablespoons at a time. cook, flipping once, until golden brown and cooked through - about 2 minutes a side.

Makes about ten silver dollar pancakes.

These are very filling pancakes - a little goes a long way!

*Note: I commonly swap the applesauce out for ripe banana, crushed strawberries, etc. Whatever sounds good that morning!
