Introduction

Number of Servings: 12

Ingredients

    1.5 lb Oxtail
    2 - 1lb packages frozen mixed vegetables
    1 sm can lima beans
    3 C Vegetable Juice or Tomato Juice
    2 - 14.5 oz cans diced tomatoes
    1 - sm head of cabbage
    1 lb - mushrooms chopped up
    5 - 6 stalks celery
    2 or 3 medium onions
    8 C - Beef broth

Directions

I put the oxtail in broth enough to cover them in the crockpot either at night or in the am, cook several hours until very tender. Pull the oxtail out and set aside to cool, strain broth. Set broth somewhere cool to let the fat come to the top. Skim off fat. Put broth into stock pot, add all ingrediants and cook till veges are tender. When veges are tender and oxtails are cool, take the meat off the bones, try to get as little fat into the soup as possible, to keep it healthy. Warm back up. Yummy soup on a cold day.
