Ingredients

    1 pkg active dry yeast
    1 cup warm water
    2 1/2 - 3 cups flour
    1 1/2 tsp salt
    1 1/2 tbsp EVOO

Directions

Makes 2 - 12 inch pizzas
In a large bowl, combine yeast and 2 cups of flour, let sit for two minutes. Add water and salt and mix well. Add remaining 1 cup of flour and EVOO.
Turn out onto floured surface and knead for 5 - 7 minutes. Place in greased bowl and let rise until doubled in size, approximately one hour.
Turn out onto lightly floured surface, punch down. Put back into greased bowl with a little EVOO and lest rest for 15 minutes.
Shape as desired and roll out to a thickness of approximately 1/4 inch.
Top as desired and cook in 500 degree oven for approximately 10 -12 minutes.
Cooking with a pizza stone makes crust crispier.
