Ingredients

1 Tbsp (15ml) Extra Virgin Olive Oil
2 cups diced Red Onion
2 bunches Broccoli
1.5 cups grated Skim Milk Cheddar Cheese (60 Calories per 30g)
1 cup grated Carrot
1 cup Golden Raisins
3/4 cup Fat Free Vanille Yogurt
1 tbsp White Wine Vinegar
1 bottle Hormel Bacon Pieces
Directions
1. Heat oil in a skillet over medium-high heat. Sauté onion until tender and caramelized, about 4 min. Let cool.
2. Cut broccoli into small florets (about 6 cups). Combine broccoli, cooled red onion, cheese, carrot and raisins - toss until evenly mixed.
3. Combine yogurt, vinegar and bacon and mix. Pour over broccoli mixture and toss until all ingredients equally mixed.
4. Season to taste with salt and pepper and garnish with bacon.
