Just something random I threw together for dinner!

A twist on the classic Cheesy Broccoli and Rice Casserole - by adding some MEAT!

My mom used to make a similar recipe but instead of rice she used Mac & Cheese. I thought this may be a healthier version.

A twist on the classic Cheesy Broccoli and Rice Casserole - by adding some MEAT!

My mom used to make a similar recipe but instead of rice she used Mac & Cheese. I thought this may be a healthier version.

Ingredients

    1/2 lb of Ground Turkey
    1 cup of Broccoli, frozen
    1 cup of Mild Cheddar and Monterey Jack Shredded
    1 cup of Minute Brown Rice, uncooked
    1 cube of chicken flavor bouillon
    1 clove of Garlic
    1 can of Healthy Request Cream of Mushroom Soup

    *NOTE/ALTERNATIVES:
    -I would suggest using more broccoli, maybe half a bag - but that's all I had left in the freezer!
    -Plus, in the future I would use a low fat cheese to make it even more healthy.
    -ALSO - I would use half a can of cream of mushroom, or more meat, it was a little soupy-er than I anticipated.

Directions

- Preheat oven to 350 degrees.
- Cook brown rice according to box/bag - while water is boiling add a chicken bouillon cube and break it up in the water - then continue with rice directions.
- While rice is cooking, brown ground turkey and add 1 tablespoon of diced garlic or a fresh diced garlic clove.
- Once turkey is browned and rice cooked, pour them both in a casserole dish, add cheese, cream of mushroom soup, and broccoli.
- Bake in oven uncovered for 25-30 minutes.


*2/3 cup = 1 serving
*Makes about 4 servings
