I found this recipe ages ago. I don't know what makes it medieval, but I've replaced the honey with agave nectar. I found this recipe ages ago. I don't know what makes it medieval, but I've replaced the honey with agave nectar.

Ingredients

    1/2 c apple butter
    3 tbsp oil
    3/4 c agave nectar
    1 1/2 tbsp cider vinegar
    3/4-1 c water (use less with all whole wheat pastry flour)
    1 1/2 c flour (a-p or whole wheat pastry, or a combination)
    1 tsp baking soda
    1/2 tsp salt

Directions

Preheat oven to 350F/175C and line a muffin tin with papers.

In a large bowl, combine wet ingredients. Sift dry ingredients into wet and mix to incorporate.

Bake for 20-25 minutes or until a toothpick or knife inserted in the middle comes out clean. Can also be made as a cake - line an 8" square pan, bake for 30 minutes.
