Introduction

This is great for comfort and a perfect way to warm up on a cold winter day! Children and adults love this dish and the result is to die for! Beefalo is used to reduce saturated fat content however regular stewing beef can be used but, the nutritional content will then change. Ingredients

    15 oz stewing Beefalo (or regular beef - nutritional content not calculated)
    3 medium raw organic potatoes (red is best) cut into cubes
    3 medium stalks organic celery, chopped
    3 medium organic carrots, peeled and chopped
    1 clove organic garlic, minced
    1 medium organic onion, chopped
    1.5 cups of mushrooms, chopped into quarters
    1/4 cup organic all purpose unbleached flour
    1 tsp paprika
    1 tsp Worcestershire sauce
    1 1/2 cups made up beef stock from 1 Organic Beef cube & water
    Salt & Pepper to taste


Directions

Cut stewing beef into 1 1/2 inch cubes and place in a pre-heated on high slow cooker. In a small bowl combine flour with salt & pepper to taste. Add flour to beef and stir until beef is well coated. Add chopped onion and minced garlic, beef stock, worcestershire sauce and paprika combine well. Add carrots, celery, mushrooms and potatoes and stir all ingredients. A Bay leaf can be added (optional). Continue to slow cook on high setting for 5 hours, stirring occasionally. Reduce heat to low for the final 30 minutes. Additional flour may be added during the final 30 minutes to thicken stew as desired.

    I'm confused? Because I'm part of the vegetarian/vegan team? If so, because I eat vegetarian meals and limit meat consumption to wild game. Beefalo is raised locally and is free range/grass fed. I don't eat beef but, wanted to let others who do that they can sub beef instead of Beefalo.
