Introduction

Ingredients

    1 lb 96% fat free ham, cubed
    2 1/2 lb Red Potatoes, medium dice
    1 can 94% Fat Free Cream of Mushroom Soup
    8 cups Skim Milk
    1/4 cup Flour
    1/4 cup I Can't Believe It's Not Butter, Light Spread
    1/2 Medium Onion, medium dice
    1 tsp Salt
    1/2 tsp Black Pepper

Directions

Boil potatoes in a large soup pot until tender. Drain and set them aside, saving 2 cups of the cooking liquid. Melt the butter in the soup pot and saute the onions over medium heat until translucent. Add the flour and stir constantly until slightly browned. Slowly stir in the cooking liquid, the milk, the soup, the potatoes, the ham, and the pepper. Simmer, stirring frequently for another 10-20 minutes until thickened to desired consistency. (This can be served with shredded cheese over the top for more calories.)
