Introduction

A very yummy, high in protein substitute for a starch! This is an ancient grain, and a perfect food! A very yummy, high in protein substitute for a starch! This is an ancient grain, and a perfect food!
Number of Servings: 6

Ingredients

    1 Cup of Quinoa, rinsed well
    1/2 Cup of Chopped Onion
    2 tsp minced garlic
    8 Sundried Tomatoes, chopped
    2 Cups of Chicken Stock
    1 Tbsp OIl

Directions

Heat oil over med/high heat. Soften the onions, tomatoes and garlic for 3-5 minutes. Stir in the chicken stock and Quinoa, bring to a boil. Reduce heat to low and simmer for 30 minutes or until Quinoa has absorbed the liquid - usually less than 30 minutes.

Makes about 4 - 1 cup servings.

    This is an excellent basic recipe and it was just what I was looking for. I wanted something other than plain quinoa. I used veggie broth and added salt & pepper. Makes a great side dish and can be the basis for main courses and yes, as MoretA63 wrote, it lends itself to endless variations! - 4/13/11

    Simply delicious. I didn't have Chicken stock so I used water and added 1/2 tsp salt. This recipe would lend itself to endless variations. I will have a lot of fun with this . - 12/6/10

    This was excellent. I used beef stock in place of the chicken stock. Will definitely make again. - 8/10/11
