Ingredients

    1 c Lowfat, or Fat Free cottage cheese (nutr. info based on Lowfat 1%.)
    1 egg white
    1/4 c Fat Free Feta, crumbled
    1/8 c asiago cheese, finely grated
    2 cloves garlic, finely chopped
    1 tbsp dried herbs or 1/4 c fresh, finely chopped.
    1tsp red pepper flakes.

Directions

Heat oven to 325.

In food processor or blender, whip cottage cheese until it is a smooth, creamy consistency. Transfer to mixing bowl and add feta, asiago, egg white, garlic and herbs, mix well. Transfer mixture to 4or 5 inch springform pan (mini-cheesecake pan) lightly pressing mixture into corners of pan. Place pan on cookie sheet and bake for 20-25 mins. Best served warm. Serve with wheaty crackers or warm, crusty bread.

Serves two.

Note: can also be baked in toaster oven, at 280-300 degrees, depending on your oven.
