Introduction

A very low fat salsa chicken full of beans and veggies served over mexi-rice. A very low fat salsa chicken full of beans and veggies served over mexi-rice.
Number of Servings: 4

Ingredients

    For the Salsa Chicken:
    4 boneless skinless chicken breasts
    1.5 cups pinto beans
    1.5 cups black beans
    2 cups frozen corn
    2 cups Salsa

    For the Mexi-Rice
    1.5 cups med-grain white rice
    1 diced green pepper
    1 diced onion
    2 T cumin
    1 T minced garlic
    2 cups water
    1 can diced tomatoes

Directions

For the Salsa Chicken:
Add all ingredients into 13x9 baking dish (lightly spray with non-stick cooking spray) and bake covered in 400 degree oven for 35-45 minutes.
Time varies due to thickness of the chicken breasts.

For the Mexi-Rice:
Sautee onion, green pepper, and rice in a non-stick skillet for 3-4 minutes. Add remaining ingredients and simmer on med-low heat for 15-20 minutes.

Serve the Salsa Chicken over the Mexi-Rice.
