Number of Servings: 4

Ingredients

    1 can Albacore Tuna packed in water, drained
    3tbsp Sunkist Original Oven Roasted Almond Accents
    3 tbsp Best Foods Reduced Fat Mayonnaise

    3 Cups Fresh Express Sweet Baby Greens
    3 Cups Fresh Express Fancy Field Greens
    2 scallions finely chopped
    1 cup halved cherry tomatoes
    1 cucumber peeled and sliced in 1/2 slices
    1 cup Trader Joes Organic kidney beans. These can be drained or not drained.
    3tbsp raw finely chopped cilantro

    3tbsp Extra Light Olive Oil
    2tbsp Balsamic Vinagrette

Directions

In a large bowl combine the Baby Greens, Fancy Field Greens, scallions, cherry tomatoes, cucumber, kidney beans, and cilantro. Divide into four bowls.

Mix tuna, mayonnaise, and almonds. Place equal amounts of the tuna mixture into each of the four bowls, on top of the lettuce mixture.

Mix the Olive Oil and the Balsamic Vinagrette together, and pour equally over each serving of salad, approximately 1.5 tbsp per bowl.

Sit back, relax, and enjoy! YUM!!!

For a vegetarian version, remove the tuna and the mayonnaise. There is still plenty of protien in this salad.

This salad is great for any time you want a healthy pick me up. It's not too heavy, and it's loaded with good stuff. You can dress it up or down based on your taste. Definitely an easy quick option for a summer meal. My kids love it. For those who don't like Balsamic Vinegar, try a squeeze of lemon instead.
