A delicious and filling meal for everyone! Yet less fat and fewer calories and low carb! You could make this without the scallops and it would be a great sidedish or meal! Entire family loved it. Ingredients

    1 Box Dreamfields Spaghetti (or whole wheat spaghetti or linguini)
    2 lb frozen scallops or fresh scallops
    12 slices turkey bacon
    1 can chicken broth
    1/2 to 1 cup pasta water
    1 tbsp cornstarch
    1/2 cup grated parmesan cheese
    3/4 c half & half (low fat preferrably)
    sea salt & pepper to taste

Directions

Microwave turkey bacon until crisp and set aside.

In large pan, bring water to a boil for cooking pasta, adding salt to water to season. While waiting for water to come to a boil take frozen scallops and place in a strainer and run luke warm water over them to get them fairly thawed out and then pat dry. Turn broiler on and in large roasting pan spray "Olive Oil" Pam and place scallops in pan for broiling.

By now water should be boiling, add pasta and set timer for 8 minutes.

Season Scallops with sea salt and pepper and place under broiler for 4 minutes and take then turn to other side and put back under broiler for another 4 minutes. Turn broiler off and leave in oven, shut oven door to keep them nice and hot until ready to serve with pasta. I used a silicone pad under my scallops to keep from sticking to roasting pan.

While pasta & scallops are cooking, break up the turkey bacon into pieces.

When pasta is almost finished cooking, take large skillet and turn on to high heat... add 3/4 of a 15 oz can of chicken broth. When pasta is ready, reserve 1 cup pasta water and drain pasta. Add pasta to skillet with chicken broth. Turn heat down to medium and when almost reduced add 1/2 cup pasta water to skillet to keep pasta from sticking. Add more water if you think you will need it. Let simmer about 2 minutes. Mix the remaining chicken broth with 1 tbsp cornstarch until dissolved and add it to pasta. Stir well. Add 3/4 cup of low fat Half & Half and 1/2 cup grated Parmesan cheese. Stir until nice and thick. Add turkey bacon and stir.

Serve pasta with scallops on top and enjoy!
