Introduction

Veggie soup with lots of cabbage! Veggie soup with lots of cabbage!
Number of Servings: 30

Ingredients

    2 small heads of cabbage, chopped
    3 cups carrots, chopped
    2 large white potatoes, peeled & chopped
    4 cups celery, chopped
    6 roma or plum tomatoes, chopped
    1 large onion, peeled & chopped
    12 cups green beans, chopped
    8 cups vegetable broth
    8 cups water
    4 cups tomato sauce

Directions

Put broth, water, celery & onion in pot, bring to a boil. Add carrots & green beans. Simmer for 1/2 hour. add potatoes, cabbage, tomatoes & tomato sauce. Simmer another hour. Add Salt/Pepper to taste.
