Ingredients

    12 oz. salmon (4 pieces)
    ~1/2 c. pesto sauce (I used 1/2 of a 6 oz. Buitoni refrigerated container)
    1 c. bread crumbs
    salt
    pepper
    olive oil

Directions

Preheat oven to 350. Place salmon, skin side down, on a lightly oiled baking sheet. Season with salt and pepper.


Mix the bread crumbs into the pesto, mixture will be crumbly. Press mixture onto salmon filets. Bake for 15 minutes or until fish is thoroughly cooked and flaky. Broil briefly to crisp the coating, if desired.

Great with a side of steamed veggies or a salad!
