Ingredients

    Chicken, oranges, honey, spices.

    Vegetable broth, celery, shallots, garlic, fresh green beans, white button mushrooms.



    * Chicken Breast, no skin, 1.00 unit (yield from 1 lb ready-to-cook chicken)
    * Lemon Juice, 0.50 lemon yields
    * Oranges, 1.00 small (2-3/8" dia)
    * Green Beans (snap), 1.00 cup
    * Celery, raw, 2.00 stalk, large (11"-12" long)
    * Garlic, 1.00 tsp
    * Mushrooms, fresh, 1.00 cup, pieces or slices
    * Shallots, 3.00 tbsp chopped
    * Honey, 0.33 tbsp
    * Vegetable Broth, 2.00 cup
    * israeli couscous, 1.00 cup

    Spark people should fix this - why do I have to put it all in twice, very lame glitch.

Directions

Lightly spray over pan with olive oil. Add fresh rinsed chicken breast. Peel one small orange, section, slice (so juice can get out). Place sections on chicken in pan. Drizzle lightly with one teaspoon of honey, salt and season to taste. Put in 425 degree oven for 15 minutes.

Prepare (slice, dice, cube - however you wish) mushrooms, celery, shallots, garlic. When the chicken has been cooking for 15 minutes, add vegetable broth to a frying pan. When broth starts to steam, add vegetables. Stir to coat.

Set chicken for another 10 minutes.

Return to stove, check chicken for done-ness. If chicken is done, turn oven off. Stir vegetables, add 1 cup israeli couscous to pan, stir thoroughly. Simmer for 5-7 minutes until israeli couscous is tender and no broth remains.

Serve & Eat.

    This was good, but you didn't specify amounts of chicken or vegetables, so how could you figure how many servings, or what the nutrition info is?? - 2/3/09
