Introduction

Ingredients

    2 (3 oz) Chicken breast (or a white fish filet) slice
    1/2 c Red Bell Pepper, strips
    1/2 c Green Bell Pepper, Strips
    1/2 c Sugar Snap Peas
    1/4 c Mushroom, slices
    1/4 c Onion, sliced
    1 c Zucchini, sliced
    2-2/3 Tbsp dry Sherry
    1-1/2 Tbsp Low-sodium Soy Sauce
    1 tsp dark sesame oil
    1/2 tsp fresh ginger (minced)
    1 tsp fresh garlic (1 clove minced)

    (To meet SB requirements you will need to add another 1/2 c veggies to your meal.)

Directions

Preheat oven to 450 degrees or Grill on Medium High

Mix in med-large bowl: sherry, soy, oil, ginger & garlic

Add chicken (or protein) and all veggies and stir until all is coated with the sauce.

Use heavy foil and place each serving into your strips of foil...fold up and seal on the top and gather & seal up the sides. Pleace in the oven on a shallow baking dish or cookie sheet.

If in oven - bake for 15-18 minutes.

If grilling - on med-high for 12-14 minutes with the cover down.

    Very, very good! I prepared in the oven. I'd love to try it on the grill next time. I think that will be even better. - 10/16/09
