This quick meal is a proven kid-pleaser, especially with the little ones. While this makes enough for six, expect requests for seconds! Because it's got the pasta and beans, it's a great low-cal, low-fat complete meal. Add a salad and you're set. This quick meal is a proven kid-pleaser, especially with the little ones. Ingredients

    1 lb. pasta, preferably rotini or elbows
    1 tbsp olive oil
    1 onion, diced
    2 cloves garlic, minced
    1 8 oz. can black beans WITH liquid
    1 tbsp. Goya Recaito (or substitute 1 tbsp. fresh minced cilantro)
    ½ cup grated parmesan
    Salt and pepper to taste

Directions

Start pasta water.

While water is heating up, sauté the onion and garlic in the olive oil, adding salt and pepper.

Add the entire can of beans, liquid included.

Stir in the recaito (or cilantro).

Simmer.

Cook pasta.

Just before pasta is done, stir the parmesan into the bean mixture.

Drain pasta. (You can return it to the pot or put it in a bowl, depending on how you’re going to serve it.)

Mix in the bean mixture.

    I like the flavor, but we prefer more spice. I cooked the beans in with the onions too long I think as they got mushy when everything was mixed. Also, I did not use all the pasta as it seemed like too much. I am going to try it again, only with less pasta and perhaps raw onion and garlic.QUICK! - 2/12/09
