Introduction
This recipe I found on the back of a box of Heartland Whole Grain Rotini--I don't know if that counts as a copyrighted source or not. I have had to make a few modifications in the nutrition calculations; for instance there was no way to put in "1/2 cup pitted black olives" in the nutrition calculator, so guestimated 10 jumbo black olives would be about half a cup. The nutrition information should be relatively close, if not perfect. Ingredients

13.25 oz Heartland Whole Wheat Rotini
3 tbsp olive oil
4 cloves garlic, minced
1 medium onion, chopped
1 large zucchini, diced
1/3 cup pepperoncini peppers, chopped
2 tbsp chili powder
1 14.5 oz can diced tomatoes with chilies, undrained
1/2 cup pitted black olives, chopped
Grated parmesan cheese (optional)
Directions
1. cook the rotini according to package directions
2. In a large skillet, heat oil over med. heat
3. Saute onions and garlic
4. Add zucchini & peppers, cook til tender but crisp
5. add chili powder, tomatoes with diced chilies, and olives. Bring to a boil.
6. reduce heat to low.
7. simmer uncovered 10 minutes, stirring frequently until mixture thickens.
8. Toss rotini with vegetable mixture.
9. sprinkle with parmesan if desired and serve immediately.
