Ingredients

1 lb bag frozen cut leaf spinach
1 Tbs olive oil
1 large onion, chopped
2 cloves garlic, pressed
8 oz feta cheese, crumbled
3 large eggs
1/3 c. milk
Salt & Pepper to taste
Directions
Preheat oven to 350 degrees. Spray 9" pie pan or 8"x8" baking pan with cooking spray, set aside.
Place frozen spinach in microwaveable bowl and heat on high 3-5 minutes, until warm.
Meanwhile, heat 1 Tbs olive oil over medium heat. Add onion and saute until soft and translucent. Add garlic and cook 1 minute more. Remove from heat.
Using clean hands, squeeze water out of the spinach, one small handful at a time (you can also use cheesecloth or perhaps a strainer for this--just remove as much water as possible).
Put dry spinach in mixing bowl. Add feta crumbles and fluff with fork or hand to make sure all the spinach lumps are broken up. Add onion and garlic mixture. Beat eggs and milk with a fork and pour over spinach. Add salt & pepper to taste. Mix thoroughly.
Pour into prepared pan and bake 35-40 minutes or until set in the middle. Allow to cool 5-10 minutes before eating.
