Ingredients

    Chicken - 1 split breast, boneless skinless
    Mushrooms - 1/2 cup sliced
    Onions - 1/4 cup
    Zucchini - 2 small cubed
    Carrots - 10 slices or 1/4 cup shredded
    Cauliflower - 2 florettes broken up
    Spinach - 1/2 cup fresh
    Spicy Clam Cocktail - 1 cup
    (Mott's Extra Spicy Clamato is my fave)
    Pasta Sauce, Roasted Pepper - 1 jar (400 g)
    Whole Wheat Pasta - 200 g (1 cup cooked)
    Cottage Cheese, Low Fat - 3/4 cup

Directions

Saute chicken and seasoning in alive oil,
when just cooked, add Veggies & saute until tender, now cover the mix in sauce and clam juice, add one cup of partially cooked cooked whole wheat pasta; let stew over low heat stirring/checking often.

When ready top with cottage cheese.

This is a very hardy and filling dish; good for the cold days or when you want to binge for comfort; low in calories and fat, and high in nutrients. Use your own choice of veggies if you don't like mine.
