Ingredients

    4 10-inch low-carb tortillas
    3/4 pound extra-lean ground beef
    1 cup chopped onion
    1 cup canned black beans, drained
    10-ounce can tomatoes with green chili peppers
    2 tsp. chili powder
    3/4 cup shredded 2 percent cheddar cheese
    3/4 cup chopped green onions

Directions

Preheat oven to 350 degres. Place ground beef and onion in skillet and add 1 cup water. Cook on medium heat a few minutes until meat is done and onions are tender. Pour water out and refrigerate to use for soup stock later. Stir in black beans, undrained tomatoes and chili powder.
Simmer uncovered for about 5 minutes or until most of the liquid has cooked out. Reserve 1/2 cup of the meat mixture for top of burritos. Divide remaining meat mixture evenly on each tortilla. Spread the meat across the middle of the tortilla
roll and place seam side down in small casserole dish. Spoon equal amounts of the reserved meat mixture on top of each rolled tortilla and then sprinkle each with equal amounts of grated cheese. Bake about 10 minutes, or until cheese is melted. Remove from oven and place each tortilla on a serving plate; garnish with 1/4 of the chopped green onion.
Serves four.

    Where's the ground beef in the ingredients? Is it factored into the nutritional info? Otherwise, this looks like a nice recipe. I will try it with ground turkey and bit of taco seasoning. Thanks for posting! - 2/6/09
