Ingredients

    1/3 c. unsweetened applesauce
    1/2 c. honey
    1 tsp. vanilla
    1/2 c. egg beaters
    1 c. mashed banana
    1 3/4 c. whole wheat flour
    1/4 c. flax seed meal
    1/2 tsp. salt
    1 tsp. baking soda
    1/4 c. hot water
    1 tsp.cinnamon

Directions

Preheat oven to 325 degrees.

In a large bowl, beat applesauce & honey together. Add egg substitute and mix well. Stir in bananas and vanilla. Stir in flour, flax and salt. Add baking soda to hot water, stir to mix, and then add to batter. Distribute into 12 muffin cups. Bake for 25 minutes. Cool on wire rack 10 minutes before removing from pan.

These freeze REALLY well for an individual breakfast or snack serving.

    They were good, a bit dry (husband said). I didn't have egg beaters on hand I used 2 eggs, so higher in calories & fat, but also higher in protein. Cinnamon is in ingredients, but not listed in directions when to add, therefore didn't include, but still tasted good. Will make again with cinnamon. - 3/10/09

    I made these and really like them. Not too sweet which is fine with me. I think this recipe can serve as a basic one and add-ins such as nuts or berries will only make them better. - 3/24/15

    It's easy to make this, most ingredients are already in the cupboard. Next time I'll toss in something to add more taste.

    Incredible!
    I made these for a playgroup I was taking my kids to this morning and they were incredible! Since I was making them for kids I turned them into mini muffins instead. I'll make them again! - 2/16/09
